Valentine's Day Recipes
Valentine's Pecan Cake
INGREDIENTS
2 1/2 c Flour
2 c Sugar
1 1/2 c Vegetable Oil
1 c Applesauce
2 1/2 ts Cinnamon
2 ts Hot Water
4 ea Egg Yolks
1 c Chopped Pecans
4 ea Egg Whites
1 x Powdered Sugar
PREPARATION
1. Combine the flour, sugar, oil, applesauce, cinnamon, water,
and egg yolks; beat at medium speed of mixer until smooth. Stir
in chopped pecans.
2. Beat egg whites (at room temperature)
until stiff; fold into batter.
3. Pour mixture into an ungreased 10-inch
tube pan.
4. Bake at 350°F for 1 hour and 30 minutes.
5. Invert pan, and cool cake completely;
remove from pan.
6. Sprinkle top of cake with powdered sugar.
