Frozen Cranberry Salad
INGREDIENTS
2 cups cranberries (fresh or canned whole berry cranberry sauce)
1 medium orange
1 cup granulated sugar
1 (9 ounce) can crushed pineapple, well drained
8 ounces cream cheese
1/2 cup chopped pecans
1 cup whipped cream
1/4 teaspoon salt
1/2 cup mayonnaise
PREPARATION
1. Grind fresh cranberries and orange. Add sugar. Stir until
sugar is dissolved.
2. In a separate bowl, mix pineapple, cream
cheese, mayonnaise, and salt. Beat until light and fluffy. Fold
in whipped cream. Stir in the ground cranberries, orange, and
sugar mixture and the nuts. Turn into a pretty glass dish and
freeze until firm.
